A Relaxing {Foodie} Weekend

Are you a hard-core weekender? Are you one of those people who usually plan activity after activity, creating a busy schedule and forgetting to relax on your days off? I usually am. However, every once in a while, when my body starts to feel run down, I have to consciously tell myself to take a break. Slow down and see where the weekend takes me. If this means I sleep late instead of going to my usual morning yoga classes or lounge all day on the couch watching old television series on Netflix, so be it. After a particularly exhausting couple of weeks I am headed for a purposefully relaxing weekend with no prescheduled plans. Alright, so I do have at least one prescheduled plan: cooking up a gourmet storm. I enjoy cooking so this isn't a stressful task. Below are a few recipes I've been eying for a while...


I'll definitely be making these Nachos from Bon Appetit in honor of Super Bowl Sunday. Except I'll probably use black beans instead of the pulled pork and I'll most likely skip the Super Bowl all together in favor of Downton Abbey. 


 I can tell by just looking at these Lentil "Meatballs" from Goop that I won't be sorry for making them. Who needs animal protein, anyway? And I'll probably add some avocado to this dish since you can never really go wrong with avocado. 


I have been pleasantly surprised by how well cauliflower can replace things like mashed potatoes and simulate the texture of rice. Here's hoping these Cauliflower Steaks from Bon Appetit taste as good as they look!
