Gwyneth Paltrow's new cookbook, My Father's Daughter, caught my eye this past Sunday while browsing the shelves of my local Barnes & Noble. I'll admit I'm a sucker for lovely covers...but after reading the first couple of pages in store I immediately ordered it from Amazon when I got home. I couldn't wait for the Tuesday afternoon UPS delivery! Imagine my surprise when it arrived Monday afternoon?
It's filled with amazingly easy and quick recipes for healthful breakfasts, lunches, weeknight dinners, and desserts. Reading her recipe for vegan banana muffins intrigued me. Banana bread is one of my most favorite sweets though my body dislikes the flour, sugar and butter used in baking. I had most of the ingredients on hand besides barley flour and bananas so after a quick trip to the market I gave these vegan muffins a shot.
They were remarkably good (and I'd like to think better for me than the original)! Instead of butter and eggs you use Canola oil; as a substitute for all purpose flour you throw in both Spelt and Barley which are much easier to digest; and to top it all off, you use real maple syrup and agave nectar as sweeteners rather than brown sugar.
I can't wait to try some of her other recipes!
